Due to the high market of products derived from chocolate whose ingredients do not favor the health of the consumer due to the high content of sugar and calories, in addition to according to the INEI, in 2019, 37.8% of the population over 15 years old was overweight. The main objective of this research work is to determine the technological, economic, commercial, financial and environmental viability for the installation of a production plant for chocolates with dehydrated mango filling sweetened with yacon syrup. It should be noted that the target audience is located in the Socioeconomic Levels A and B of Metropolitan Lima. The product consists of a box with 15 organic cocoa chocolate bonbons, filled with dehydrated mango and will only have yacon as its main sweetener. Each chocolate will have a weight of 10 grams and will be wrapped in aluminum foil and with a striking packaging. There will be a demand of 30,351 kilograms of finished product for the last year. For the project, there will be a 350 m2 plant, which is located in the Pachacamac district due to its proximity to the target market and the closest interaction with the final consumer. The capacity of the plant will be 26,421 kilograms of chocolate. Finally, to start with the development of the project, there will be an initial investment of S/.833,546.21 for working capital. The total investment for assets will be S/.600,649.10 and an opportunity cost of 15.19% with a 5-year horizon of constant feess with an Effective Annual Rateof 15%. As the financial investment, there is a NPV of S/.1’504,460.79, an IRR of 57.00% and a benefit to cost ratio of 2.50 and a recovery perdiod of 1.86 years.
