The objective of the present research is determinate the market, technical, economic, financial and social viability for the installation of a factory artichokes hearts with natural additives vacuum sealed. The finished product is a healthy snack does not contain saturated fat or processed products and it may be mixed with salt, olive oil or ground pepper. The 273 surveys were taken and identified the flavor will be dominant in sales, which fit to olive oil. These products are intended for Lima Metropolitana as the target market and will sell primarily through supermarkets and warehouses. The sale price will be S/ 10.37 per unit. The plant will be in Chincha, belonging to province of Ica, where the labor forces, availability of raw materials and technology required are ideal. Finally, the assets give the amount of S/ 722 245 and the working capital is S/ 293 448, giving rise in a total investment of S/ 1 015 693. A finance of 40% of the investment was proposed with a horizon of 5 years and 15.60% annual effective rate. The result of economic evaluation is S/ 888 158 net present value, 42% internal rate of return, 1.87 ratio of benefit-cost and a recovery period of 3 years and 5 months. The financial evaluation results S/ 940 236 net present value, 54.80% internal rate of return, 2.54 ratio of benefit-cost and a recovery period of 2 years and 11 months.
