Tourism is a key part of the economies of many countries, it has a multiplying effect that involves different actors throughout its chain, however, in recent years it has been debated whether it has been developing sustainably. Today we find various types of tourism, gastronomic tourism one of them, which has had a boom in Latin American countries such as Peru and Colombia in recent years; this demands greater attention in the branch and therefore in the way in which gastronomic tourism contributes to the development of a sustainable economy in the mentioned countries. Using 400 questionnaire surveys, via Google Forms, from Colombian and Peruvian citizens who have visited the other country, this quantitative research paper aims to raise awareness on the impact of gastronomy as a sustainable tourism factor in the economic development of Peru and Columbia. The SPSS software was used to analyze the data collected under the method of bivariate correlations with the Pearson [NP1] coefficient. The variables considered were gastronomic tourism and sustainable development. The results showed that a correlation [NP2] between both variables exists in both countries, due to the positive impact on the local economy, the creation of quality employment and support to the farmer. “This is explained by the growth of the gastronomic industry – the gastronomic boom of the 90s in Peru and the coffee boom of recent years in Colombia.” However, the levels of significance in some of the variables, despite recognizing the correlation between them, were not so high that they were considered highly significant, this shows that both governments must work to develop public policies to strengthen this sector, and that the benefits derived from it will be better distributed among the population. New lines of research on gastronomic tourism are recommended in more Latin American countries, addressing public policies and ways of contributing to sustainable economic development.
