Resumen: El pavo es un ave de alto valor nutricional; sin embargo, en el Perú, no existen muchos
productos que lo utilicen como materia prima. Asimismo, es mayormente consumido
durante las festividades de diciembre. Por este motivo, se ha detectado la oportunidad de
crear un producto que aproveche los beneficios que nos puede brindar.
El presente trabajo de estudio de prefactibilidad tiene como objetivo demostrar la
viabilidad técnica, social, económica, financiera y de mercado de una planta de
producción de conservas de pavo. La finalidad es brindar a las personas una alternativa
saludable para el acompañamiento de sus comidas.
El público objetivo son personas de Lima Metropolitana, entre 18 y 55 años de
los sectores socioeconómicos A y B que busquen tener una vida saludable. Se realizó
dicha segmentación; ya que, este público objetivo tiene decisión de compra y cuenta con
el poder adquisitivo para obtener productos acordes al mencionado estilo de vida. En base
a ello, la demanda del proyecto es de 349 635 unidades / año.
Se ha definido la macrolocalización de la planta de producción en el departamento
de Lima. De igual forma, a nivel de microlocalización, se ubicará en el distrito de Chilca
en la provincia de Cañete.
Con relación al tamaño de planta óptimo para el proyecto, se tiene como resultado
que está limitado por el mercado. Se obtiene una capacidad instalada de 384 000
unidades/año. Cada unidad es un envase de vidrio de 160 gramos de contenido neto.
Asimismo, según los cálculos para determinar la disposición de planta, se tendrá un área
de terreno de planta de 621,18 ¿2. En adición a lo anterior, se establecerán las políticas
y procedimientos de calidad, gestión ambiental, mantenimiento y de seguridad y salud
ocupacional.
Finalmente, se demuestra la factibilidad del proyecto como resultado de los
análisis económicos y financieros. Se obtuvo un VAN financiero de S/198 756,3, un TIR
de 23,64%, y un periodo de recupero de 4,65 años.
Turkey is a bird of high nutritional value. However, in Peru there are not many products that use it as a raw material. Likewise it is usually consumed only on December’s festivities. For this reason, the opportunity to create a product that takes advantage of the benefits it can provide us has been detected. The present pre-feasibility study work aims to demonstrate the technical, social, economic, financial and market viability of a canned turkey production plant. The purpose is to provide people a healthy alternative to accompany their meals. The target audience is people from Lima Metropolitana, between 18 and 55 years old from socioeconomic sectors A and B who seek to have a healthy life. This segmentation was carried out because this target audience has a purchase decision and has the purchasing power to obtain products according to the aforementioned lifestyle. Based on this, the project's demand is 349 635 units / year. The macro-location of the production plant in the department of Lima has been defined. In relation to the optimal plant size for the project, it has been evaluated taking into account some factors and the result is that the plant size is limited by the market. Likewise according to the calculations to determine the layout of the plant, considering production and administrative areas, there will be an area of 621,18 ¿2. In addition to the above, policies and procedures for quality, environmental management, maintenance and occupational health and safety will be established. Finally, the feasibility of the project is demonstrated as a result of the economic and financial analyzes.
