Abstract: Debido al gran incremento de la atención en los productos naturales para consumidores
e investigadores, se plantea como objetivo de estudio y desarrollo la producción de aceite
esencial de limón y su exportación al mercado canadiense. Estudiando la demanda, se
consiguió determinar las necesidades de mercado, es decir, alrededor de 165 tambores de
180 kg.
Asimismo, el estudio de localización definió la ubicación más adecuada para la
planta Asenciali, siendo esta la provincia de Sullana, en el departamento de Piura.
La capacidad instalada de 210 375,65 kg al año de aceite esencial de limón se ve
limitada por el cuello de botella en la operación de decantado, la cual presenta una
producción anual de 101 tambores de 180 kg.
Para la producción del aceite esencial se optó por seleccionar la combinación de
los métodos de expresión y por arrastre de vapor, dado que estos presentan la mejor
relación calidad-costo. También, para mantener la calidad del producto, se implementó
un plan de Análisis de Peligros y Puntos Críticos de Control (HACCP) durante el proceso
productivo. Con respecto al impacto ambiental, se estudiaron las salidas de cada actividad
para definir el impacto y las medidas correctivas en cada caso.
Además, se desarrollaron el análisis de Guerchet y el análisis relacional para
determinar la correcta distribución de la planta, la cual presenta un área total de 1 335
m2
. Por último, a través de la evaluación económica-financiera, se contó con una
inversión total de S/ 2 787 851,89, donde el 40 % fue financiado por el banco y el 60 %
con capital propio. También, presentaron indicadores positivos, como el valor actual neto
(VAN) económico de S/ 770 228,21 inferior al VAN financiero de S/ 3 689 294,84.
Igualmente, los valores de la tasa interna de retorno (TIR) económica (27,71 %) y
financiera (37,55 %) fueron superiores al costo de oportunidad (COK=19,13 %). Dado a
ello, se concluyó que el proyecto sobre la elaboración de aceite esencial de limón es

Due to the great increase in attention to natural products for consumers and researchers, the production of lemon essential oil and its export to the Canadian market is proposed as a study and development objective. Studying the demand, it was possible to determine the market needs, that is, about 165 drums of 180 kg. Likewise, the location study defined the most suitable location for the Asenciali plant, this being the province of Sullana, in the department of Piura. The installed capacity of 210,375.65 kg per year of lemon essential oil is limited by the bottleneck in the decanting operation, which has an annual production of 101 180- kg drums. For the production of the essential oil, it was decided to select the combination of the expression and steam drag methods, since these present the best quality-cost ratio. Also, to maintain product quality, a Hazard Analysis and Critical Control Points (HACCP) plan was implemented during the production process. Regarding the environmental impact, the outputs of each activity were studied to define the impact and the corrective measures in each case. The Guerchet analysis and relational analysis were also taken into account to determine the correct distribution of the plant, which presents a total area of 1 335 m2 . Finally, through the economic-financial evaluation, a total investment of S/ 2 787 851,89 was available, of which 40 % was financed by the bank and 60 % by own capital.
