This research consists of conducting a pre-feasibility study for the installation of a plant to produce a spicy cream based on aguaymanto with aji limo, based on the general objective of obtaining a quality, nutritious and competitively priced product. This product uses aguaymanto, an Andean fruit with high nutrients and benefits for the development of the human body, as its main raw material. Meanwhile, aji limo is considered one of the hottest chili peppers in Peru and is well known as an essential ingredient in different typical dishes. For this research, a market study was carried out to determine the target market and the geographic area of the project development. First, the potential demand and project demand were calculated through historical data of the last 7 years. The projected demand will be used to determine the economic viability of the product. Also, a plant location study was carried out based on the main and important factors that would delimit the choice. With the Ranking of Factors method, both in macro and micro location, to determine the department and district respectively of the spicy cream. Then, the plant size was determined in order to identify the right size for the demand. Therefore, the market size, productive resources, technology and break-even point were compared. For the development of project engineering, the product and composition are technically defined. In addition, the production process, balance of materials and equipment to be used, installed capacity and calculation of the number of machines required were described. Likewise, the general layout, physical characteristics, calculation of areas and detail layout were determined. Then, the operating and financial budgets were calculated, as well as the economic and financial evaluation. Finally, through social indicators, a social evaluation will be developed
