In the present investigation, a prefeasibility study was carried out for the installation of a roasted and ground coffee (coffea arábica) in filter bags processing factory. Faced with an increasing coffee consumption in Perú, coffee can be divided into two main groups, instant coffee and ground coffee. Instant coffee, as its name implies, is very practical and easy to prepare, however the flavor and aroma are not as pleasant as a ground coffee, which, at the same time, requires a more elaborate preparation and use of different types of coffee machines. Faced with this situation, Café Kallpa presents a roasted and ground Arabic coffee in filter bags, a product that ensures a good flavor, aroma, and at the same time, ease of preparation as well as transport. At the beginning of the project, the product and its uses were defined, as well as the goods that would be substitutes and complementary. Subsequently, it was determined that the target market will be Lima Metropolitan and the target audience will be young adults, that is, people who are between 21 and 35 years old. After conducting a market investigation, it was determined that there will be a demand for 57 326 boxes and 66 165 boxes in the first and last year of the project respectively. Each box contains 20 filter bags with 5 grams of roasted and ground Arabic coffee. Regarding the location of the processing factory, a ranking method was first used to determine the macro location where the department of Lima was chosen. On the other hand, for the micro location, using the same analysis method, it was determined that the best option was Chilca district. The production process, where the vast majority of machines are semi-automatic, consists of 10 activities and requires two operators. The bottleneck activity defined a maximum production capacity of 139 230 boxes per year. Each box contains 20 sachets of 5 grams of roasted and ground Arabic coffee. Considering the great importance of product quality control and the occupational safety and health of the collaborators, the critical points of quality control were analyzed and the hazards and risks associated with the production process were identified, respectively. In addition, the relational analysis method was used for the factory design where, considering the National Building Regulations, a total area of 508, 41 m2 was established. For the proper functioning of the administrative and operational activities of the company, a total of 9 collaborators are required. Finally, the economic, financial and social aspects of the project were evaluated, where it is concluded that it requires an investment of S/ 847 978,29 which 80% will be covered with a debt and the rest with the shareholders. In addition, an economic and financial NPV of S/ 289 654,90 and S/ 307 924,55 respectively and an economic and financial IRR of 21,43% and 24,14% respectively, both higher than the cost of capital. Regarding the social aspect of the project, after evaluating the indicators of added value, employability and capital return, it was concluded that the project generates a favorable impact on society.
