Nowadays there is a strong tendency of people to consume healthier products, modifying their consumption habits, especially in Lima Metropolitan. Likewise, people have less time to prepare their foods, as a result, the consumption of products that provide practicality, that are easy to transport, the ones which take little time in their elaboration process and the ones which provide a large amount of nutrients, has increased. This change provides an opportunity to satisfy this need by making canned of pota. In the canned food market, we will differentiate ourselves from the competition by presenting a very good quality product that provides many nutrients and also practical and low-cost product. It is worth mentioning that currently there are no canned of pota in Perú; however, the production and consumption in other presentations has increased considerably in recent years, so it is a great opportunity to spread the benefits of the Pota and start this business. In addition, the potential market demand is 20 172,552 canned of pota and the specific demand of the project is 1,793,748 canned of pota for the last year, this shows that there is a wide margin of growth. The plant will be located in the Callao district and will have a capacity of 281,223 kilograms of pota. About the technologies, there are no limitations for the project because all machinery and equipment for processing can be easily acquired in the country. On the other hand, for the production process there are means of control such as NTP and HACCP. It has been estimated that with an investment of approximately 459 423 soles the project can be implemented and generate profits in the years of operation of the company. From the results of the study, it was obtained that the demand of the first year is 554 473 canned of pota and the last year is 1,793,748 canned of pota, these represent a NPV of 1 279 477, 71 soles and a financial IRR of 82.66%, these have been calculated for five years and with a COK of 11.62%. With all this information, it is concluded that the project is feasible and viable.
