Abstract: En la actualidad existe una fuerte tendencia de las personas por consumir productos más
saludables, modificando sus hábitos de consumo, especialmente en Lima Metropolitana.
Asimismo, las personas poseen menos tiempo para elaborar sus comidas, en
consecuencia, se ha incrementado el consumo de los productos que otorguen practicidad,
que sean fáciles de transportar, que demoren poco en su proceso de elaboración y que a
su vez otorguen una gran cantidad de nutrientes. Este cambio ofrece una oportunidad para
satisfacer esta necesidad mediante la elaboración de conservas de pota.
El mercado de conservas, nos diferenciaremos de la competencia por presentar un
producto de muy buena calidad, que aporta muchos nutrientes, práctico y sobre todo de
bajo costo. Cabe mencionar que actualmente en el Perú no existen conservas de pota; sin
embargo, su producción y consumo en otras presentaciones ha aumentado
considerablemente en los últimos años, por lo que es una gran oportunidad de difundir
los beneficios de la pota y emprender este negocio. Adicionalmente, la demanda potencial
del mercado es de 20 172 552 conservas de pota y la demanda específica del proyecto es
de 1 793 748 conservas de pota para el último año, lo que demuestra que existe un amplio
margen de crecimiento.
La planta estará localizada en el distrito del Callao y contará con una capacidad
de 281 223 kilogramos de pota. En cuanto a las tecnologías no existen limitantes para el
proyecto, ya que toda la maquinaria y equipos para la elaboración pueden ser adquiridas
con facilidad en el país, así mismo para el proceso productivo se cuenta con medios de
control como las NTP y el HACCP.
Se ha estimado que con una inversión de aproximadamente de 459 423 soles se
puede implementar el proyecto y generar beneficios en los años de funcionamiento de la
empresa. De los resultados del estudio se obtuvo que la demanda del primer año es de
554 473 conservas de pota y del último año es de 1 793 748, las cuales representan un
VAN y un TIR financiero de 1 279 477, 71 soles y 82,66% calculados a cinco años y con
un COK de 11.62% respectivamente. Con ello se concluye que el proyecto es viable.

In the canned food market, we will differentiate ourselves from the competition by presenting a very good quality product that provides many nutrients and also practical and low-cost product. It is worth mentioning that currently there are no canned of pota in Perú; however, the production and consumption in other presentations has increased considerably in recent years, so it is a great opportunity to spread the benefits of the Pota and start this business.
