The general objective of this research is to design antibacterial gel production process taking advantage of coffee residues from Junín, such as mucilage. For the design process, mathematical modeling, and chemical kinetics of mucilage fermentation at temperature between 29°C - 31°C. As a result, it was determined that the fermentation time is 86 hours using the yeast Saccharomyces cerevisae as a microorganism in a batch reactor. For this time, a concentration of 9.46% weight/weight of ethanol was achieved with a conversion of 88.04%. To ensure the safety and efficacy of the fermenter, a safety factor of 30% was considered, resulting in an estimated dimension of 39.7 m3 according to the mole balance. On the other hand, the ProMax 4.0 process simulator was used to model the distillation column. As distillate, 88.9% of liquid volumetric fraction of ethanol was obtained, concentration required to produce sanitizing gel according to MINSA regulations. In addition, the sizing of the main unitary equipment such as the distillation column, storage tanks and agitation tank was carried out according to their volumetric capacity. Moreover, the hazard control analysis was carried out using the HAZID methodology and calculation of the E-factor (environmental impact study). Finally, an analysis of the economic viability of the process was made using economic indicators such as the internal rate of return (IRR) and the net present value (NPV) based on coffee mucilage with a processing capacity of 32 tons per day. According to this evaluation, the project is viable because the IRR in the next 12 years is 28.1 %. While the value of NPV is US$ 1 126 383 in 12 years with ROI of 34.5%.
