The present thesis is unique in its kind; it is experimental in nature, and it is quantitative and applicative in improving the physical and mechanical properties of cement-sand concrete, a common construction material in the Peruvian Lowland Jungle. To enhance its properties in both fresh and hardened states, sugarcane juice was used. Therefore, the main objective was to determine the influence of adding different percentages of this organic additive on these properties, considering water-cement ratios of 0.57, 0.67, and 0.77, and 0%, 0.3%, 0.6%, and 0.9% of sugarcane juice; evaluated through the following tests: slump, air entrainment, unit weight, and compressive strength at 3, 7, 14, and 28 days of curing. The fine aggregate was characterized, and the standard mixture design was performed without sugarcane juice; then, the experimental samples were prepared. For the simple compression tests, 336 specimens were prepared, of which 84 cylindrical specimens corresponded to the standard concrete and 252 to the experimental ones. From the results, it is concluded that the addition of sugarcane juice significantly influences the physical and mechanical properties of cement-sand concrete, with the best results obtained with additions of 0.9% of sugarcane juice, water-cement ratio of 0.57, reaching 52.83%, 77.32%, 94.33%, and 100% at 3, 7, 14, and 28 days, respectively, thus confirming the hypothesis.
