The objective of the present research is to determine the market, technical, economic, financial and social viability of installing a plant for the production of dehydrated pineapple filtering agents with cinnamon. For this reason, a market study was conducted with a target public made up of people in Metropolitan Lima who belong to the NSE B and C1 that consume infusion beverages and a demand of 16 011,33 kg of finished product was determined, which is equivalent to 800 566 boxes of filter infusion. The plant location will be in the department of Lima, specifically in Lurín, and was determined using the factor ranking method. The plant size was determined by the size-technology ratio, which is 35 270,90 kg of finished product per year. In addition, the production process of filtering agents based on dehydrated pineapple with cinnamon has the necessary technology for its elaboration. The capacity of the plant is defined by the bottleneck operation, which was determined through the dehydration operation with a capacity of 30,431.89 kilograms of finished product per year. Also, an area of 390 m2 was determined for the industrial plant. On the other hand, the project investment is S/. 1 323 744,45 and its financing structure is distributed in 44,93% debt and 55,07% working capital. Similarly, an economic and financial evaluation was carried out for the five-year life of the project, obtaining an economic flow that achieved a net present value of 518 363,78, internal rate of return 23,97%, benefit-cost ratio of 1,39 and a payback period of four years and nine months, while the financial flow resulted in a net present value of 618 992,26, internal rate of return 33,96%, benefit-cost ratio of 1,85 and a payback period of four years and seven months. Finally, the project generates a positive social impact, determined through the product-capital ratio that generates 10,31 soles of added value for each sol invested.
