Currently, a large part of Lima's population has developed bad eating habits, which in the long term is unfavorable, since they can lead to overweight and obesity. Therefore, it was decided to develop a pre-feasibility study for the installation of a plant to produce vegetarian hamburgers called "Nutriburger", with quinoa and cowpea as the main raw materials. Initially, a market study was carried out to determine the demand for the project for the next 5 years. Taking into account that there is no recorded historical data, it was calculated based on the consumer profile, with which the target market was defined and, finally, surveys were conducted to find the intention and intensity that affect the demand. Then, a study was made for the location of the plant, by means of the Ranking of Factors method. As a result of the macro- and micro-localization, the ideal locations for the project were determined to be the city of Lima and the district of San Juan de Lurigancho, in Zarate industrial zone, respectively. The plant size was then selected, taking the break-even point as the minimum size and the market as the maximum size. Later, the technical specifications of the product, the production process, equipment, machinery and the number of workers required were defined. At the same time, the installed capacity was calculated to identify the bottleneck of the process and a study of environmental impact, quality, occupational health and safety, and maintenance system was carried out to prepare the plant plan. Then, the required jobs and the necessary amount of human capital to carry out the project were identified. In addition, a total investment of S/794 856,97 was determined, of which 40% will be financed by a bank, followed by an economic and financial evaluation to determine the profitability of the project by means of NPV, IRR, benefit-cost ratio, payback period and some financial ratios. Finally, the social evaluation of the project was carried out to identify the benefits provided through the calculation of the added value and social indicators.
