The study presents a preliminary model to determine the feasibility of installing a processing plant for snacks made from fruits and vegetables coated with cocoa chocolate in Peru. This product will be sold to the final consumer in packs of 50 grams, and to intermediary buyers in a packaged box of 10 units. The project is being developed in Lima and is aimed at the A and B segment, people between 18 and 55 years of age, who are interested in healthy eating. To calculate the demand, we based on a population projection model with a five-year rolling five-year history from 2016 to 2020. The linear projection indicates that the demand for the last year 2025 amounts to a total of 552 548 units, being the highest in the five years of projection. Regarding the location, a factor ranking model was used, based on key data to be able to choose among the different locations, giving the Callao district as the plant site. The dimensions of the facility were calculated taking into account the limitations of technology, break-even point, market and productive resources. Likewise, it is necessary to mention that the production process, the selection of machinery and the layout of the plant, were carried out carefully to guarantee that the expectations of the project are met. Finally, the total investment for the implementation of the project was S/ 2 180 352 with an opportunity cost of 18,02%. The economic flow indicators indicate that the project is profitable due to a positive NPV of S/2 235 417 and a recovery period of less than five years.
