Companies belonging to the food sector frequently suffer a problem that is present in all the stages of the supply chain. This problem is the generation of large amounts of food waste, which usually originates to large extent during warehouse processes. This situation is mainly due to the deterioration of perishable products during storage and incidents during manual activities that threaten the physical quality of the food. As a result, these industries often incur higher costs and losses due to waste. The objective of this research work is to propose an improvement model through the implementation of the Slotting methodology and the Kaizen Teian tool, which will allow reducing the waste generated in the warehouse of a food company in Peru by 47.64%. In response to the problem, the stages that compose the warehouse process were evaluated, which correspond to the reception, storage of products, preparation of orders (picking and packing) and dispatch. The critical activities and distribution criteria in the warehouse were analyzed, with which the objective of reducing the current value of the ratio of wastage of sauces in plastic bottles was established to reach an expected result of 3.75%.
