The objective of the study was to determine the effects of climatic variability on agrifood production in the province of Acomayo-Cusco from year 2000 to 2050 taking into account the meteorological variables of temperature and precipitation. To this end, the information on agri-food production provided by the Ministry of Agriculture and Irrigation and information on the climatological variations of the National Meteorology and Hydrology Service of Peru - SENAMHI, from 2000 to 2017, was analyzed using simple linear regression with the information of each independent variable harvest, temperature and rainfall and the influence of the factors involved in agrifood production was analyzed with the multiple linear regression analysis. For the production forecast from 2018 to 2050, it was calculated based on the retrospective information by applying multiple linear regression with the explanatory variables. The results express a progressive increase in the production of potatoes, corn, barley and quinoa, being the temperature and surface harvested variables that determined the increase. The climatic variability expresses the increase in temperature and the progressive decrease in rainfall. The predictions to the year 2050 indicate that there is probably an increase in the production of potatoes, corn, barley and quinoa depending on the increase in temperatures (which should not exceed the limits required for production) and the decrease in rainfall. The strategies of adaptation and / or resilience applied are numerous; however, they require technical assistance and infrastructure, as well as the presence of competent sectors and local, regional and national authorities.
