Quinoa is a highly nutritious andean grain with resistance to a wide range of abiotic stresses. However, its sensitivity to high temperatures is a limitation for its cultivation in arid regions. Two trials were carried out to understand the effect of high temperatures on 25 lines of quinoa improved by inducing mutations of the Amarilla de Marangani variety and interspecific crosses between Chenopodium quinoa and Chenopodium berlandieri. In the first trial, the effect of heat stress on morphology, physiology, yield and grain quality was evaluated and different heat avoidance and tolerance mechanisms were identified. In the second trial, 16 indices of tolerance and susceptibility to heat stress were used to select genotypes with greater performance stability under stress and non-stress conditions. The results show that quinoas improved through genetic mutation present heat tolerance mechanisms associated with a greater formation of the number of grains per plant, either due to a prolongation of the reproductive phase or due to greater branching of the plant. Likewise, the improved lines from interspecific crosses present heat tolerance mechanisms associated with a greater number of grains per plant, but due to a greater physiological efficiency of the plant, since it has a higher level of chlorophyll index (SPAD degrees), a high harvest index value, and a lower height. In addition, 4 stress indices with a greater probability of success in the selection of heat-tolerant genotypes are identified. These indices allowed us to identify 3 mutant genotypes (M4AM250 - 85 LM 17B, M4AM250 - 96 LM 17B, M3AM150 - 1005) and 2 interspecific crosses (QxB - 3.18, QxB - 3.14), as those with the greatest stability of performance under stress conditions and no heat stress.
