This study aimed to redesign the quality control process to increase raw material yield in a fruit company. The Ishikawa diagram was used to determine the factors of low performance and the causes found were: downtime, bottleneck, poor quality of the fruit, high quantity of concentrate, lack of personnel and absenteeism from work. Results: low performance with respect to the raw material in the 2022 campaign, the production of mango pulp with 55%, passion fruit 27.43%, at least global standards at 66.67% and 30%. The current process was determined, which consisted of six quality controls. Manuals were created to improve quality control in the pulp area by increasing two processes and it was possible to reduce the processing times of mango and passion fruit, where the number of batches will increase from 20 to 22, which generated an increase in yield. in mango at 64.52% and passion fruit at 30.77%. Finally, in the financial analysis of the proposal, a B/C of 2.06 was obtained, meaning that each sole invested had a profit of 1.06 soles. Conclusions: The redesign of a quality control process was determined and the yield of raw materials increased. The process was viable.
