Determination of thermal properties of pulps of two tropical fruits Hylocereus spp. (pitahaya) and Mauritia flexuosa (aguaje) by differential scanning calorimetry. The thermal properties of food are directly related to their moisture levels and the temperatures at which they are processed or stored, so it is essential to know these aspects to carry out the necessary heat transfer calculations in freezing processes, refrigeration, drying or heating of food and beverages. Taking into account that our Amazon region has a great biodiversity of food, this research aimed to determine the melting point (Tm), enthalpy of fusion (ΔHf), freezing temperature (Tc) and freezing enthalpy (ΔHc) of pitahaya (Hylocereus spp.) and aguaje (Mauritia flexuosa) pulps with different moisture contents by differential scanning calorimetry (DSC) analysis. The pitahaya pulps analyzed contained 85%; 75%; 65% and 55% humidity, while the aguaje pulps were with 53%; 40%; 30% and 20% humidity, which were scanned in triplicate at a heating and cooling rate of 10 °C/min with differentiated intervals for melting and freezing in temperature ranges from -80 oC to 200 oC. The melting temperature values found for the pitahaya pulps are between -3,57 oC and -15,73 oC, while the aguaje pulps are between 1,86 oC and -1,91 oC. The enthalpy of fusion for pitahaya and aguaje pulps were between 110,42 and 32,899 J/g; 190,48 and 78,942 J/g respectively. Regarding freezing temperatures, values between -2,15 oC and -5,02 oC were found for pitahaya pulps and values between 0,93 oC and -2,13 oC for aguaje pulps. While the freezing enthalpies for pitahaya pulps were between the ranges of 155,34 J/g and 61,439 J/g; for aguaje pulps between 113,27 J/g and 94,517 J/g. The values obtained when subjected to the Pearson test, it was determined that there is a very strong direct positive relationship between the values of the moisture content of the pulps analyzed in relation to the temperature and enthalpy of fusion, as well as with the temperature. and freezing enthalpy, concluding that the moisture content has a significant effect on the values of the thermal properties analyzed.
