The present work was developed in the Laboratory of Engineering and Projects and the Laboratory of food analysis of the Faculty of Agroindustrial Engineering of the National University of San Martín, and is oriented to find suitable parameters for the dehydration of ramie foliage (Boehmeria Nívea), a species of high nutritional value and that is satisfactorily adapted to the environmental conditions presented by the San Martín region. Proximal analysis determinations were made, obtaining the following values: Humidity 87.03%, 2.82% of proteins. 0.7% ethereal extract, 2.4% ash, 1.62% fiber and 5.43% nitrogen free extract in the fresh material, while in the dehydrated product values of: 8.68% moisture were obtained. 19.79% protein, 4.92% ethereal extract, 16.85% ash, 11.37% fiber and 38.39% nitrogen free extract. For drying a laboratory convective dryer equipment with variable drying air velocity and temperature was used; During this whole process the weight loss resulting from evaporation of the water contained in the leaves was controlled at defined time intervals for the different temperature conditions (40 ° C, 50 ° C and 80 ° C) and air velocity ( 0.5 m / s, 0.6 m / s and 1.1 m / s) used. The diffusion of the water present in the ramie leaves was calculated by adjusting the Fick model for an infinite flat plate, using the program Microcal Origin 3.5, determining a good degree of adjustment with the experimental data of drying and values for this property ranging from 0.804 X10-10 m2 / s up to 3.23x10-10 m2 / s, when the temperature is increased from 40 ° C to 80 ° C. The calculated drying rate was 1.5, 2 and 3 kg / h m2 for temperatures of and 40 ° C. 50 ° C and 60 ° C, respectively. The luminosity of dry leaves varied between 33 and 37 units of color, treating them with a product destined for animal consumption the final color of the product would not be important, more so if the availability of nutrients, which allowed to carry out the process in the minor Time possible, and with intermediate value of luminosity. The obtained flour crossed in a 60% of mesh of 180 microns, and the and the apparent digestibility of the same was of 34.78, which makes it advisable for animal feeding
