The aim of this research work was to evaluate the levels of knowledge of good manufacturing practices (GMP) and their relation in obtaining the Certificate of healthy sales stall in meat traders of the municipal markets of the district of Tarapoto - 2018. The study involved 177 meat traders from the municipal markets of the district of Tarapoto. A baseline survey was initially used on a sample of 121 meat traders, distributed among municipal markets Nº2 and Nº3, followed by training and a second survey to evaluate how much they had learned about good manufacturing practices (GMP). In the first evaluation, only two categories were obtained: "Regular" in 79 traders, "bad" in 42 traders. After the training, a second evaluation was carried out, in which three categories were obtained: "Good" with 53 traders, "Fair" with 66 traders and "Bad" with 2 traders. Subsequently, a Wilcoxon test was performed, showing a significant difference between the respective evaluations. Finally, Pearson's Chi-square was used, thus proving the significant difference in the knowledge level evaluation. In conclusion, out of 121 meat traders, only 53 traders passed the second evaluation, demonstrating that they know about GMP, however during the inspections carried out by the municipality of Tarapoto, only 30 traders obtained the certificate of healthy sales stall, which means that out of 53 traders, only 30 practiced what they learned in the training, thus obtaining their certificate of healthy sales stall.
