The objectives of the present work were to identify and develop a prediction model, as well as to establish the authenticity of honeys in 04 ecological zones. It was subjected to partial least squares (PLS) discriminant analysis in order to find the fundamental relationships between the independent variables and classes coded as integers, which were simultaneously modeled taking into account the variance and covariance between variables and classes. Spectra of pure samples of organic honey, corn syrup (corn syrup) and invert sugar were measured at different concentrations (0%, 2%, 4%, 6%, 8%, 8%, 10%, 12%, 14%, 16%, 18%, 20%, 30%, 40%, 50%, 60%, 70%, 80%, 90%, 92%, 94%, 96%, 98%, 100%), additional sample dilutions were prepared as validation samples to verify the methods. The spectra were divided into three regions particularly by the presence of the predominant sugars: Glucose, fructose and sucrose for wavelengths between 300-5200 and 4300 cm -1 respectively. The samples presented intramolecular combinations and overtones such as carbon-hydrogen (CH), oxygen-hydrogen (OH) and nitrogen-hydrogen (NH) bonds. The linear regression in both models presents coefficients of determination close to 1 (0.9956 and 0.9851) and low calculation errors (SEE) and SEP prediction error. It is important to indicate that the spectrometry technique is capable of predicting the contamination or adulteration of honeys from corn syrup and invert sugar. Glucose is presented around 4420 cm -1, fructose approximately around 5150 cm -1 and sucrose around 8230 cm -1, according to the tendency demonstrated by the data. The accumulated variance in X and Y was calculated with the purpose of reducing the number of variables according to the calculated percentage of adulteration, data greater than 1 were taken to obtain a good selection, this allowed to obtain about 99.6% of the accumulated variance in Y. Fructose presented an average of 29.63%, glucose 31.90% and sucrose 1.69%, all presenting a statistical difference (P<0.01). The viscosity values of the honeys in the localities and ecosystems are in a range of 3.15 to 1.25 Pa.s, with an average value of 2.06 Pa.s, presenting a highly significant difference (P<0.01).
