The purpose of this research work was to analyze the current situation in the fishing industry sector, specifically with regard to the production of fishmeal and oil derived from fishing. In this way, we have an improvement for the problems that afflict the companies of the fishing sector integrating the principles of Lean Manufacturing. The methodology focused on the analysis of the sub-process that includes cooking, dewatering and pressing, which are an integral part of the production process under study, which allowed us to verify the hypothesis. With the application of diagnostic tools such as Pareto Diagram, production records and quality tools, we were able to determine the root causes of the failures and incidents in the production system that generated low productivity. The results of applying Lean Manufacturing improvement tools such as the 5S, a total improvement of 52% to 87% was obtained compared to the initial situation identified. In addition, an improvement in productivity with a value of 0.76 Ton-LP/Ton MP-Hour, which means 0.99 more tons of press liquor per hour of process. Finally, the variation of the productivity index in the cooking section showed a decrease from 0.093 Ton-H2O/Ton MP-Hour to 0.091 Ton-H2O/Ton MP-Hour, which means a total of 20 kg of water to evaporate less for each hour of process, achieving a reduction in the expenses associated with fuel consumption. The contribution of this research to the knowledge and literature in the field of Lean Manufacturing principles is linked to the influence that the company exerts on its own productivity with the objective of optimizing its procedures.
