ABSTRACT The objective of this work was to quantify total nitrogen and total protein using the Kjeldahl-Gunning method. Samples of coffee pulp of the Catimor variety from different altitudes (above and below 1500 m.a.s.l.) were used, these samples were obtained with the help of surgical steel pulping machines and traditional pulping machines (made of copper). The results obtained were: 2.71, 3.38 and 2.15% of total nitrogen; 16.94, 21.14 and 13.44% total protein. Whose conditions were: a) height less than 1500 m.a.s.l. and traditional machine; b) height greater than 1500 m.a.s.l. and surgical steel machine; c) height greater than 1500 m.a.s.l. and traditional machine, respectively. It is concluded that these nitrogen and protein values are higher than those reported in the reviewed literature.
