ABSTRACT In the present research work, the Physical and Chemical Constants of Moringa oleifera seed oil from the district of Moche, Trujillo - Peru, were determined, for which the identification of the plant was carried out, in the Herbarium Truxillensis, code 59657 (HUT). The method for obtaining the oil was by Soxhlet Extraction, and physical and chemical measurements, by methods established in the AOAC. The results were: relative density 0.8981 ± 0.000; refractive index 1.45845 ± 0.00224; acid number 1.7989 ± 0.3113; acidity 0.9184 ± 0.1589 oleic acid and esterification number 150.7063 ± 6.0242; saponification index 152.5052 ± 5.8359 and unsaponifiable residues 2.7760 ± 0.3714; the iodine number 57.7155 ± 1.3984. From the analysis of the results, it is concluded: Due to the Physical and Chemical Constants found, under the working conditions, the Moringa oleifera seed oil can be used in the food and cosmetic industry.
