ABSTRACT The objective of this research was to determine the physicochemical properties of biofilms made from goose starch (oxalis tuberosa) variety "keny", adding as a plasticizer glycerol for a treatment and Sorbitol for another treatment, in addition to adding as emulsifier of tween mixture 80. For the determination of the physicochemical properties was measured. moisture percentage, percentage of water solubility, thickness, ΔE total color difference, value of a * (green to red), b * (blue to yellow) and "L" (lightness); Observing better physicochemical characteristics in films made with glycerol plasticizer whose values were 22.11 ± 1.21%, 33.28 ± 5.21%, 0.25 mm, 10.95 ± 1.02 ΔE, 0.91 ± 0.53 a *, 4.66 ± 0.38 b *, 71.32 ± 1.54 (L ) respectively according to what was described above. When performing the ANOVA analysis of variance, it was determined that there is a statistically significant difference between the average of the moisture percentage values, ΔE (total difference in color), b * (blue to yellow) and "L" (Luminosity) ; between the treatment with glycerol and the treatment with sorbitol.Also it was concluded that there is no statistically significant difference between the mean values of water solubility percentage, thickness and the value of a * (green to red) with a level of 95% confidence. With the results it was observed that the lower the thickness of the films, there is a slight increase in the luminosity values. In addition, a good transparency was observed, which indicates that starch films when reducing their thickness will increase their transparency, in such a way that they are used in cases in which the product must be visible to consumers.
