The main purpose of this research work was to evaluate the influence of the concentration of the total reducing sugars of the government liquid "syrup" in the production of Candida utilis. var. important. To achieve this objective, agitated and aerated batch type tank bioreactors built with basic components and auxiliary devices were designed and built, with a capacity of 1 L., with a height of 16 cm., A diameter of 10 cm. and a base of equal measure to the diameter of the bioreactor. Candida utilis was used for the preparation of the inoculum. var. important. code 1081, the culture medium was prepared from dilutions of government liquid "syrup" from 5 to 35 gr / L of total reducing sugars "ART", with intervals of 5 units of difference in each treatment that was prepared. The process was carried out at a temperature of 23ºC; at a pH of 5.2 + 0.2, an air flow of 20 mL / sec. for a period of 48 hours. The results found show that biomass and productivity increase gradually, from 2.02 to 10.49 g / L and from 0.04 to 0.22 g / Lh respectively as the concentration of concentrations of "ART" supplied from the "syrup" government liquid increases. The maximum value of the yield of C. utilis. var. The higher is 56.02% at the concentration of 15 g / L of "ART" of the government liquid "syrup", whose value is close to the theoretical yield of 56.7%.
