ABSTRACT Owing to the continuous use of drugs used to treat candidiasis and their frequent adverse effects, this research work aims to evaluate the antifungal activity of the ethanolic extract of Ipomoea batatas L. "purple sweet potato" against Candida albicans, in order to establish the antifungal potential of Ipomoea batatas L. "purple sweet potato" by means of the minimum inhibitory concentration (MIC). The Ipomoea batatas Lam "sweet potato" plant was acquired in the town of Mochal, in the district of Poroto, Trujillo Province, La Libertad Region, from which the ethanolic extract was obtained by adding acidified 96 ° alcohol to pH 3.5 to purple sweet potato skins, macerated for 7 days with daily manual stirring. The evaluation of the antifungal activity was carried out by the microdilution method in a colorimetric plate, using resazurin 0,1 % as a reading indicator, it was excellent for the evaluation of the antifungal susceptibility against Candida albicans. The results show that the purple sweet potato peel has antifungal activity, this is evidenced by making microdilutions and by applying rezarsurin to it, we were able to show that the purple sweet potato inhibited the growth of Candida albicans, changing from pink to purple color and thus evidencing death. by Candida albicans. Concluding that the ethanolic extract of Ipomoea batatas L. "purple sweet potato" has antifungal activity against Candida albicans.
