Rice grain is the second most consumed cereal in the world, manufacturing is concentrated with 85% coming from Asia, while other countries represent 15%. Within 15%, Peru is located, and one of the regions with the highest rice production is the Lambayeque region with an estimated 13,208 t per day. Among the different types of rice exported by the Lambayeque region we have Ñelen rice, which is made up of broken grains, since, in milling, the rice grain is husked and tends to break, obtaining broken grains smaller than ¼ of a whole grain. and it is used for human and animal consumption. The following proposal aims at the design of an extruder machine, applied to the rice mills in Lambayeque, which will contribute to the elaboration of the vitaminized rice grain, which will add essential micronutrients for the organism, in order to contribute effectively in the consumer's diet of this cereal.
