The objective of this research project is to develop a model to increase the efficiency of the banana ripening process in micro and small enterprises (MSEs) in the agroindustrial sector. The study will focus on addressing the main causes of defective products, high downtime, and high set-up times in this process. The state of the art and theoretical framework will analyze and review existing research and literature related to banana ripening, as well as planned maintenance and the 5S, SW and SMED (Single-Minute Exchange of Die) tools. It will seek to identify best practices and approaches used in the agribusiness industry to improve efficiency in the product ripening process. The diagnosis of the current problem will be carried out through data collection and direct observation in the MSEs of the agroindustrial sector involved in the banana ripening process. The problems and underlying causes that generate defective products, high downtime and high installation times will be analyzed. This diagnosis will provide a clear picture of the current situation and provide relevant information for the design of the improvement proposal. The design and development of the proposal will be based on the implementation of planned maintenance tools and techniques, such as the 5S (Seiri, Seiton, Seiso, Seiketsu and Shitsuke), the SW analysis (Strengths, Weaknesses, Opportunities, Threats) and the SMED methodology. These tools will be used systematically and sequentially to optimize the banana ripening process. The proposal employed the development of concrete action plans to address each of the previously identified causes. Key performance indicators will be established to measure the impact of the improvements implemented. In addition, specific recommendations will be provided for the effective management of banana ripening in agribusiness MSEs, with the objective of increasing efficiency and reducing defective products, downtime and setup times.
