The objective of this research work is to make known the percentage of people who consume this additive very often, since its excessive intake produces long-term diseases. For our data collection we have used the questionnaire that was based on twenty-two questions, in which sheets with the respective questions have been used to mark and thus collect information. Our main instrument for obtaining data is the survey and our sample is made up of people from the town of Santa Clara who consume monosodium glutamate in Chinese restaurants. Our thesis develops as the type of descriptive quantitative research. Regarding the results of our surveys, the consumption of monosodium glutamate in Chinese restaurants is excessive since people consume it very often, also in our results we were able to notice that the cause of some clinical symptoms is due to frequent visits to these Chinese restaurants. , since its high consumption generates different symptoms in public health. Finally, we can mention that the central point of this thesis is to determine to what extent the presence of monosodium glutamate is found in commercial gastronomy with reference to Chinese restaurants and the people who consume it, for further analysis and dissemination.
