People with a chronic disease and with very specific food needs, specialized or prescribed by a doctor, have always required special services in their diet. Given the situation generated by COVID-19, the need to provide a specialized solution within the food industry has become even more evident, many food offers and healthy diets have been born in the market, without taking into account chronic diseases such as celiac disease, diabetes, kidney failure, overweight among others, which affect a significant part of the population and excess vegetables or meats, without proper preparation could cause more damage than the benefit they initially produce. According to the ENDES national survey (2016), 62.8% of the population aged 15 and over is overweight in Metropolitan Lima. The objective of this thesis is to provide a disruptive solution for these people who suffer from these and other diseases that require a specialized diet, recommended by nutritionists and endocrinologists who are specialists in food and nutrition, as well as being a safe, fast and safe option. under medical supervision, in addition to the lack of time currently due to the health emergency that reduces effective hours of work and food dictated by the regulations issued by the government to combat COVID 19 that further limits these people in the preparation of their own diet and despite being at home developing their home office work activities. The solution proposal investigated that current healthy restaurants lack this medical supervision and customer support. This solution will allow the client to access from their cell phone, have a photographic evidence of their diet that is prescribed by a doctor, indicate the ingredients that they find palatable and if their diet allows it so that nutritionists can put together a weekly varied food package, option to consult with the medical staff, frequent questions about food to break myths and false recipes on the internet and in addition to permanent specialized advice on your nutritional progress. This disruptive solution proposal has an investment of S/ 87,940.07 Soles, with a net present value of NPV S/ 1,070,613.70 soles after five years of useful life of the business plan. This figure was determined with a WACC Weighted Average Cost of Capital of 15.90% per annum Soles with an internal rate of return of TIR 745.19% , which would indicate that this business plan could be attractive for future investors with a higher WACC and still obtain a positive return on investment. Of the total investment, an own contribution of 54% and financing of 46% is considered.
