Currently, the retail sector, specifically the restaurant subsector, is an important sector in the country, given that it has established itself as a source of employment, a key factor in domestic consumption and, therefore, a key factor in the country's gross domestic product. In that sense, by observing a clear growth potential in the coming years, this generates a need for companies to develop and have a competitive advantage. For this reason, the level of service of the logistics chains of retail companies is a key factor to focus on given that key points intervene such as the operation of the logistics chain, the optimization of supply strategies, stock management and compliance with the agreed supply times. Therefore, by maintaining an optimal level of service, high logistics expenses resulting from problems in the logistics chain would not affect the profitability of companies as much. Given this, the Sales and Operations Panning tool is consolidated as a comprehensive tool that, together with the standardization of the processes of price negotiation, planning, supply and selection of suppliers, as well as the development of the kraljic matrix for the correct management of suppliers and inputs; and, finally, the appropriate selection of the demand forecasting method will allow establishing the solid foundations for the optimal functioning of the supply chain.
