The present work was to design and elaborate an energy drink based on Musa cavendishii (CAPIRONA BANANA) Solanum sessiliflorum Dunal (COCONA) and Ananas comosus (PIÑA). The present study is a completely randomized experimental type with two study factors and with three levels each. The population will be Musa cavendishii (Banana capirona) Solanum sessiliflorum Dunal (Cocona) and Ananas comosus (Pineapple) grown in the Peruvian Amazon. The mixture in coconut water with the components was homogenized with CMC and with a heat treatment of 90 ° C for 5 minutes. The sensory test determined that the best product was with 50% of the capirone liquid, 12% cocona juice, 18% pineapple juice, 20% coconut water and a 0.8% carboxymethylcellulose (CMC) content by means of sweetness attributes, taste, acidity, consistency, color and smell; the judges also determined a medium acceptability of the drink. The physicochemical analyzes of the product were 1.25% protein, lipids 0.07%, carbohydrates 4.23%, soluble solids º Brix, 4.50%, and a pH 3.94, Minerals such as calcium with 45 mg, iron 1.55 mg, sodium 81.65 mg, potassium 28 mg and with a caloric value of 21.49 kcal. Finally, in the microbiological analyzes they determined that the product is safe and suitable for human consumption.
