ABSTRACT Although in all regions of the world it has been produced organically for thousands of years, it can be considered that the rebirth of this production system originates in Germany and England from the first half of the twentieth century. The first movements of organic producers are born in these countries with the philosophy of establishing healthy and fertile soils as a condition for the production of healthy food for the population. Over the last 30 years, this resurgence of organic production has been consolidated and spread all over the planet, influenced mainly by three factors: strengthening environmental awareness and recognition of the unsustainability of modern production systems, growing concern about The damage of agrochemicals to human health and the concern for the health of the last decade. For these three reasons, the organic products have been grabbing a larger market globally while increasing their economic value. One of the markets that have the highest demand for this type of product is Germany, followed by Canada and the USA, there is a wide gap to be covered with supply of primary and / or processed products. Germany is one of the main importers of organic products in the world. It is here, in the city of Nuremberg where the international fair of organic products BIOFACH has started today. In this important event are thousands of organic businessmen and producers around the world who are exhibiting novel products and exchanging ideas on the trends that this market brings for this and other years. One of them is the rise of "free of" products. The thesis presented aims to commercialize "organic fruit powder", a novel product, environmentally friendly, healthy and functional. The basis for the production of this product will be golden berry and blue berry, these fruits came to life when discovering the benefits they had when consuming them. According to the above, we will develop the present investigation to see the feasibility of the same in the Province of Cajamarca. Chapter I outlines the general aspects of the research problem. Chapter II describes the theoretical framework of research. In Chapter III, the hypothesis is detailed. In Chapter IV, the professional application proposal that details the entire market study is described. Chapter V describes economic and financial analysis. Finally, the conclusions are presented as a result of the present study.
