The mashua and the maca, are Andean tubers that have various properties, which are usually attributed to glucosinolates. There are three types of glucosinolates; the aliphatic, indolic and aromatic being the one of greater proportion in these species those of aromatic type. No molecular studies of the biosynthesis of this compound have been found, so in the present thesis, using DNA primer design and using PCR, fragments of genes that could be involved in the synthesis of aromatic glucosinolates in Mashua and Maca have been amplified. The steps carried out were: 1) Search of genes and identification of conserved areas, 2) design of primers for gene fragments and 3) PCR amplification using the designed primers. As a first step, nucleotide and amino acid sequences of the Brassicales order were found, which were aligned to locate the conserved areas. Following that, "simple" and degenerated primers were designed from the conserved zones taking into account the characteristics of the primer and its specificity. Finally, a validation of the primers was made, using Broccoli as a positive control. Simple and degenerate primers were obtained for the CYP79A2, CYP83A1, CYP83B1, SUR1 and UGT74B1 genes. Not all the primers amplified in the control, but at least one set of primers amplified per gene, in the control and in maca samples. However, in mashua, amplicons were obtained only with the degenerate primers, for the UGT74B1 gen. It is concluded that the zone where the initiators were designed in maca, is conserved; however in Mashua it is more difficult to predict since the sequences must have undergone more changes in evolution.
