The following investigation was developed to determine oil losses during the process of extraction of palm oil (elaeis guineensis) from the INDUPALSA Company located in the Province of Lamas, this allows to achieve a greater and better efficiency in the process of extraction of the crude oil of palm determining and quantifying the oil losses that exist during the process of extraction of the INDUPALSA Company. The procedure was based on quantification of losses in dry oil base of the main points of loss (pick, fiber, husk, sieving and florentine), varying the sterilization pressure, these pressures were 40, 45 and 50 PSI, and consequently performed a mass balance. It was possible to quantify in units of the extraction rate, the quantity of oil that is eliminated in each mass flow that leaves the process; Also the chemical analysis (acid index, iodine index and peroxide index) of the oil obtained by each pressure was made; The results were within the permissible limits of the technical standard of palm oil, and statistical analysis indicated that there was no difference between the values (p> 0.05). From the pressures studied it was determined that the pressure at 40 PSI generated the highest yield with 92.48%, also the losses at the points at this pressure, were lower than the pressures of 45 and 50 PSI, whose yields were 91.08% And 86.09% respectively. Therefore, the company INDUPALSA was asked to use a pressure of 40 PSI in the sterilization stage, as it ensures the desired reduction of oil losses at the points mentioned.
