The present work had for objective to elaborate a huito preserve in syrup for that which was determined the technological parameters of time and temperature of having scalded and thermal treatment, the physiochemical composition, microbiologica, sensorial evaluation and the quality of the finished product. The Huito (Genipa americana L.) it is a tree of conical glass, with concentrated foliage in the apex of the ramillas. The fruit is an a spherical or ovoid berry from 1 O to 12 cm. long and 7 to · 9 diameter cm, with a weight that oscillates among 200 to 400 gr. very strong characteristic scent, flavor acidulado, as much the pericarp as the pulp are succulent and groceries. For the obtaining of the preserve Huito syrup one worked with three study factors: Concentration soluble Solids in the syrup (23 and 30 oBrix), Temperature for time of having scalded 90° x 3 minutes and 90° x 5 minutes, Time of having sterilized of the product 15 and 20 minutes The physiochemical composition of the matter prevails Huito (Genipa americana L.) it is the following one: Humidity 77.08%, Ashy 0.5%, Fat 0.2%, Proteins 1.3%, Carbohydrates 20.73%, Fiber l. 5o/o, Accustomed to Total 22.92%, 0 Brix 14.3%, pH 3.5%. The best dear formulation starting from the sensorial data of the preserve Huito in syrup demonstrates that the treatment T8 with the following parameters: 1 liquidate of government 30° Brix, scalded 90°C for Smin and thermal treatment of having sterilized 20min. The results of the physiochemical analyses and microbiologist with the best formulation processed sample that it is capable for the human consumption.
