This work was carried out in the Industrial Chemical Analysis Laboratory, of the Faculty of Chemical Engineering of the UNAP-Iquitos Peru, the purpose was to evaluate the coagulant activity of the cocoa shell mucilage Theobroma cacao L., to remove turbidity and color in the water treatment. The methodology consisted of determining the chemical characteristics of the cocoa shell, obtaining the mucilage by heating the shell at 80 °C and precipitation with ethanol, The coagulant activity of the mucilage was carried out by jar tests, varying the coagulant doses (0, 20, 40, 60, 80,100) mg/L and slow stirring speed (20, 30, 60) rpm. The results obtained show that the cocoa shell has a humidity of 84,57%, carbohydrates of 11,51% protein 1,19%, fat 0,04% and ash 0,016%, the yield in dry powder mucilage was 1,87%, and the highest coagulant activity occurs at pH between 11,5 to 12,5. The dose to treat water with low turbidity, of 50 UNT, 21 UC y pH 11,5 it is 60 mg/L at 80 mg/L with slow stirring speeds of 40 rpm and for waters with high turbidity 300 NTU, 120 UC and pH 11,5 the optimal dose is between 20 mg / L to 100mg / l with slow stirring between 20rpm to 40rpm, obtaining removals from 98,84% to 99,74%. Concluding that the mucilage of the cocoa shell has coagulant activity at pH 11,5 so it could not be used in the treatment of water for human consumption
