This research study aims to determine the best treatment in obtaining sausages type "Hot-dog" from Arapaima gigas (PAICHE), at the Pilot School Canned Food Industries Plant -National University Peruvian Amazonia. The raw material used came from the Center Piscícola Quistococha Research School of Biological Sciences UNAP located in the district of San Juan -Maynas-Loreto-Peru. The applied experimental design was a factorial design with three factors of 23 studies with two levels each: Concentration of dye "montecarmin" (A1 = A2 = 0.05 and 0.075%), concentration of flavor hot-dog, (B1 = 1.11 and B2 = 0.22%), cooking time (C1 = C2 = 25 and 30 ° C.) The process flow for obtaining type sausage "Hot dog" was applied from Arapaima gigas (PAICHE) by the following operations: mixing of raw materials, washing, disinfecting and rinsing, heading / flaking / gutted, filleting, boning / cutting, I weighed, washed and drained, crushed, then proceeds to heavy II, ground, cutterizado, sausage, tied, brewing, meat chilled, vacuum packed and finally frozen and stored. To assess the quality of the finished product the treasury-chemical analysis or proximate analysis, as moisture, ash, fat, protein, carbohydrates, calories and total solids applied., Microbiological analysis was evaluated according to the International Standard No. 071 MINSA / DIGESA also sensory analysis was evaluated by applying the method of scale with 09 trained panelists semi, valuing the attributes of aroma, flavor, color, texture, overall appearance, applying Standard -UNE: 87-020-93 / equivalent to the standard ISO 4121-1987. The results obtained according to the tests laid indicate that the best treatment was T6 treatment, indicating that obtaining type Hot Dog Sausage, from Arapaima gigas (PAICHE), is the best valued physical, chemical, sensory and microbiologic.
