The sale of soft drinks is an important economic activity in the city of Iquitos and throughout Peru, they are very consumed by the vast majority of the population in their different flavors. It is considered important to know the microbiological quality of these products. For these reasons, this research work aimed to determine the bacteriological quality of Mauritia flexuosa “aguaje” and Hordeum vulgare “barley” soft drinks that are sold in the Belén market in the city of Iquitos. We worked with a total of 150 samples of soft drinks; 75 of Hordeum vulgare "barley" and 75 of Mauritia flexuosa "aguaje". Taking place between the months of July to December 2017. The bacteriological quality was determined according to the Sanitary Technical Standard. The results of the analysis of Mauritia flexuosa “aguaje” and Hordeum vulgare “barley” soft drinks, respectively, reported that: 98.7% and 53.4% have viable mesophilic aerobic bacteria; 97.4% and 61.3% coliforms; 90% and 86.6% Escherichia coli that exceed the limits of the Sanitary Technical Standard (DIGESA). No Staphylococcus aureus and Salmonella were found in any of the samples analyzed. Based on the results, it was concluded that the bacteriological quality of Mauritia flexuosa “aguaje” and Hordeum vulgare “barley” soft drinks that are sold in the Bethlehem market are not suitable for human consumption.
