The objective of this work is to “Use three tubers: Yucca (M. Esculenta Crantz), White Potato (S. tuberosum L.) and Sacha Papa Morada (D. trifida), as coagulants during the purification of water in the plant of drinking water treatment in Iquitos ”. Extract starch, to be evaluated as coagulants and select the optimal dose for the starch jar test. To compare the behavior of the starch extracted from the three species of tubers with the polychloride aluminum coagulant that is currently used in the drinking water treatment plant in the city of Iquitos. The Descriptive-Experimental methodology was used to specify the properties, characteristics and important features of the project indicators. When analyzing three variables: pH, color and turbidity to the water treated with the coagulants extracted by means of the Jar test, it is observed that only one of them complies with the expected4 that is, it gives better results; assessing its quality in the treatment and distribution phase. In the first case, with physical and chemical analyzes of the raw water, the parameters to be evaluated are: Turbidity = 25.8 NTU; pH = 5.77. Of the treated water: Turbidity and pH, for each of the starches of the tested tubers are: White Potato pH = 5.20 Turbidity = 10.9; Yucca pH = 5.56 Turbidity = 8.6. Sacha Papa Morada pH = 5.21 Turbidity = 6.5. The results show that the starch of the indicated tuber, as the best coagulant, in the presence of Aluminum Polychloride, is the purple sacha papaThe research work concludes indicating that the tuber with the best coagulation and therefore with the best cost, was the purple sacha papa.
