Abstract: Se aplicó un Diseño Factorial 32, realizándose un análisis de varianza (ANOVA), diferencia
significativa mínima de Fisher (LSD), test de Fisher para todos los casos donde se encontró
diferencia significativa para evaluar el efecto de la proporción arazá/lactosuero y la concentración
de azúcar sobre el Color, Sabor, Olor y Apariencia General, con el propósito de determinar los
parámetros de proceso; siendo la proporción arazá/lactosuero de 20/80 y 14 °Brix (formulación
5), la que nos permitió obtener una bebida refrescante a base de lactosuero con la adición de arazá
de mayor aceptación sensorial.
Las características físico químicas del producto final presentaron un 91.53% de humedad, 1.2%
de proteína, de grasa 0.21%, de carbohidratos 6.56%, acidez titulable (ácido cítrico), 0.46%, un
pH 4.1, así como un análisis microbiológico, demostraron que la bebida se encuentra apta para el
consumo humana al encontrarse dentro de los parámetros microbiológicos permitidos por las
normas técnicas Peruana.
La prueba de aceptabilidad realizada a la bebida obtuvo un 40% de aceptación ante un 26.7% de
rechazo y un 33.3% que menciono no gustarle ni disgustarle, así como un 56.7% si compraría
ante un 43.3% que no la compraría, el 93.3% menciono que Si compraría de conocer sus
beneficios ante un 6.7% que dijo, No compraría así, conociera sus beneficios
For preparing the beverage, a factorial design 3 squared was done, performing an analysis of variance (ANOVA), and in cases where a significant difference was found, a minimum Fisher (LSD ) test was performed.
