The main objective was to determine the technological parameters for obtaining dry pulp from Averrhoa carambola L star fruit (star fruit) by the atomization method of the acid and sweet variety. Statistical analysis (ANOVA) was used for the atomization process, a factorial design 23 was applied, represented by the equation: 0 1 1 2 2 3 3 4 1 2 5 1 3 6 2 3 7 2 3 Y X X X X X X X X X X X It will have three factors: X1 = Temperature (° C), X2 = Maltodextrin (%), X3 = Turning speed. Factor X1 has 2 levels (-1 = 195 ° C, +1 = 200 ° C), factor X2 has 2 levels (-1 = 4%, +1 = 8%), Factor X3 has 2 levels (- 1 = 10000 rpm, +1 = 15000) Revolutions per minute, with an acceptance range of R2 (> 85%) and the P value (P <0.05) or (Fcal> Ftable). For the acid and sweet carambola powder samples, a physical-chemical analysis was performed to determine the best treatment with the final concentrations of vitamin C and provitamin A as an indicator, the best results were obtained at a temperature of 195 ° C, speed of rotation of the sprinkler 10,000 rpm and encapsulant maltodextrin 4% in relation w / v; sweet star fruit: humidity 3.5%, ash 3.7%, fat 0.4%, protein 2.55%, carbohydrates 89.85%, pro vitamin A 48.1 mg / 100 g of sample and vitamin C of 120 mg / 100 g of sample and acid star fruit: Humidity 4.00 %, ash 3.69%, fat 1.17%, protein 2.58%, carbohydrates 88.56%, pro vitamin A 86.2 mg / 100 g of sample and vitamin C of 534.03 mg / 100 g of sample.
