This research was to determine the presence of penicillin G, tetraciclyne and microbiological load of raw milk, from four outlets and herds of Iquitos, in 2013. Samples were processed in the food microbiology laboratory of the Faculty of food Industry of the National University of the Peruvian Amazon. A total of 24 milk samples obtained from three different samples were analized. The method of analysis used for the determination of antibiotics was using the beta tetra kit SNAP duo St-Test, from IDEXX laboratories of the United States, which the limits of sensivity of residues FDA. The analysis of the microbial alteration spanned indicator microorganism (mesophillic aerobic bacteria) by the technique of standard plate count, and hygiene indicators (total coliforms, fecal coliforms and Escherichia coli) by the most probable number technique. These counts were compared with the provisions of the current microbiological standards for raw milk, to determinate if they are suitable or unsuitable for human consumption. The results were that antibiotics found in 5 of the milk samples, that´s equivalent to 20,8%. About analysis of the microbiological load the 75% (18 samples) are unsuitable for human consumption according to sanitary standards. Of total unsuitable samples (75%), the 58, 3%goes to mesophillic aerobic and 75% to total coliformes. Also fecal coliforms was found in 100% of the sample also the presence of Escherichia coli in 66, 7%.
