The objective of this research work was to determine the variation of salivary pH due to the effect of xylitol and chamomile infusion after the consumption of school breakfast in children of the Educational Institution 51022, Diego Quispe Tito de San Sebastián, Cusco - 2024. The study is of an explanatory type, has a quantitative, quasi-experimental, (pretest - posttest) longitudinal, analytical and comparative approach. The sample consisted of 32 students, who were divided into two groups of 16 students per group. Group G1 was instructed to consume a piece of chewing gum with xylitol after the consumption of school breakfast, and Group G2 was instructed to ingest for a period of 5 minutes 150 ml of chamomile infusion after the consumption of school breakfast. As results it was obtained that the basal pH for both groups was standardized after tooth brushing (p=0.342), in the same way it was registered and standardized after the consumption of school breakfast (p=0.672), both the chewing gum with xylitol and the chamomile infusion raise the salivary pH and finally it was proved that the average pH increase of the chewing gum with xylitol (7.60) has no statistical difference with the average pH of the chamomile infusion (7.37) and that the average pH increase of the chewing gum with xylitol (7.60) has no statistical difference with the average pH of the chamomile infusion (7.37).
