Objective: To determine the pH of food from the Cusco region and its variation on the Salivary pH after consumption of these foods. Methodology: The design corresponds to an observational, cross-sectional comparative study. The convenience sample, applying inclusion and exclusion criteria, obtaining a sample of 20 students comprised of 10 women and 10 men was selected. The 20 students ate 50 foods every day 5 foods. Prior to collecting samples indicated: brushing teeth, not eat or drink, do not perform strenuous exercise at least an hour before collecting saliva. Data were collected for two consecutive weeks from Monday to Friday on a schedule from 3:00 to 6:00 pm, making two shots saliva sample, one before food intake and another 2 to 3 minutes after intake, then waited 10 minutes for the salivary pH was restored and again the collection of salivary pH initial, then the intake of these foods. Subsequently both saliva samples were measured by a meter pH to determine the salivary pH presenting the values recorded in a table, one for each student; made up of four columns corresponding to the 50 foods Cusco Región, pH of the food, salivary pH initial, Salivary pH after ingestion of food. For emptying data and Microsoft Excel was used for data analysis SPSS was used. t test or Student t test was performed. Results: The results of this study showed that if there are significant differences, in most foods used, for pH food and relationship to salivary pH after consumption of these. Conclusions: If there is a statistically significant difference in relation to food and salivary pH (p <0.05).
