This research document is a detailed description of the implementation of the System Hazard Analysis and Critical Control Point (HACCP for its acronym in English) Points, prepared for the meat section of the store “San Pedro“ Orion Supermarkets. This safety plan was developed based on the guidelines established by the Ministry of Health at the Ministerial Resolution No. 449-2006 / MINSA, called “Sanitary Standard for Application of HACCP System in Food and Beverage Manufacturing“, leaving out the development of each and every one of the principles outlined in this resolution; apart from the review of the relevant literature for the collection of information that formed the basis for this work. To determine the current status of facilities regarding health and hygiene factors, a questionnaire survey was applied before and after implementation of the HACCP system, which is based on the following laws: Law No. 26842 General Health Law , DS No. 007-98-SA Health Regulations on Supervision and Control of Food Beverages; R.M. No. 449-2006 / MINSA Sanitary Regulations for the Implementation of HACCP in the manufacture of food and beverage and RM No. 1653-2002-SA / DM Health Regulations of Supermarkets Food and Beverage; obtaining favorable results, since after the implementation of general operating conditions at regular minimum was increased. During the development stage of the HACCP system, it was determined that yes there are significant biological hazards that threaten the quality and safety of the product, then using the decision tree, four critical control points were identified in the processes of: Welcome, Ready, Refrigeration - Freezing and Exhibition - Sale, establishing critical limits, monitoring system, corrective actions and respective verification procedures; finally a system of documentation and registration is proposed. Emphasis is also given in the Good Handling Practices BPM, elaborándose a manual for the meat section, as it forms the basis for the implementation of HACCP. For evaluation of customer satisfaction conducted a simple survey to determine customer satisfaction with regard to the presentation, handling and quality of products with good results, since most customers are satisfied with the product.
