This research addresses the study of the Oropesa bread producing units, in order to identify the factors that affect productivity levels given their availability of resources, their production processes, their marketing system and productivity levels that differentiate them. , to finally estimate the magnitude in which the factors of production affect the formation of their income. It proceeded to build this primary information through the implementation of a survey on a representative sample of 36 producers of bread Oropesa, whose results are first used in a descriptive analysis of comparative statics; and it is complemented with an econometric application that identifies the production factors that most affect the formation of their income. The study concludes due to the great disparity between producers in terms of endowment of production factors, volumes produced, product variety and productivity levels achieved, this is conditioned by the ownership nature of the ovens and by the innovative behavior of each producer ; highlighting that tenant producers cannot achieve significant production volumes, as they are limited by their scarce endowment of capital resources and the reduced volumes of inputs they use, while oven-owning producers have the advantage of materializing a higher capitalization , to produce more advantageous volumes and varieties of bread, reaching higher productivity. Finally, the study shows the incidence of production factors where it turns out that: if an additional sol is paid for work, income increases by 0.0075 soles; if the technological improvement improves by one unit, the income increases by 420 soles; If expenditure on inputs increases by one sol, income increases by 3.44 soles; and also, that any event that bothers the production process, the income will decrease by 0.19 soles.
