The present work titled “Implementation of the Hazard Analysis System and Critical Control Points in the company Agro Industrias Zela E.I.R.L. Cusco 2020”, Its purpose is to implement the HACCP Plan in a company dedicated to the packaging and marketing of Extra Virgin and Virgin Olive Oil, to prevent food hazards, control risk and ensure product safety. The prerequisites were developed which are the Manual of Good Manufacturing Practices (BPM) and the Standardized Sanitation Operating Procedures (POES), where 8 chapters were considered for the GMP considering the procedures for the control of raw materials, handling and storage of raw material and finished product, equipment maintenance, staff training, waste and waste management and finally product recovery. In the SOP, 7 chapters were considered, such as the cleaning and disinfection program before and during and after the production process, cleaning and sanitizing equipment, utensils and infrastructure, control of hygiene and health of the handler, water management, control of chemical products and pest control, the last chapter developed the verification of the POES. The methodology used by the research is based on the Peruvian legal regulations D.S. 007- 98-SA and R.M-449-2006 / MINSA, based on the seven principles and the twelve steps for the development of the HACCP system. Developing the HACCP Plan, two critical control points were identified, the first CCP is the oil filtering with its critical limit, change the filter every 200 liters of olive oil and the second CCP is the bottle washing with the critical limit, wash the bottle with water. and 5% sodium carbonate, rinse with 5 liters of water and preventive and corrective actions were addressed in order to control the danger, in this way it is necessary to keep a control record of the critical control points to identify if it is exceeded control limit. When evaluating the HACCP Plan, Act No. 6 “Sanitary Inspection of Various Food and Beverage Processing Establishments“ was used (Salud, 2013) the first evaluation obtained a percentage of 39%, being a bad rating, when implementing the Plan HACCP was re-evaluated and an increase of 56% was obtained, obtaining a total of 95%, being an excellent rating. With the implementation of the HACCP System, it seeks to obtain a safe product and expand into new markets.
